Its name comes from an old plant. In the Valais it was cultivated by pagans and Romans. In the French Jura it is used for the production of "young". It is cultivated on sites up to more than 1,000 metres above sea level. Controlled fermentation without malolactic fermentation. Match with Aperitif and fish. With its acidity and subtle fruitiness, it also goes perfectly with Asian-European fusion cuisine.
